3 OZ SIMPLE SYRUP
¼ OZ COINTREAU
HOLY MOLE SAUCE*
2 DASH CHOCOLATE BITTERS

[HOLY MOLE SAUCE*
4 SQUARES DARK CHOCOLATE
1 TEASPOON CHOPPED THYME
2 TEASPOON CUMIN 
4 CRUSHED WHOLE CLOVES 
2 TEASPOONS CINNAMON
1 TEASPOON CHILE POWDER 
2 CUPS SUGAR 
2 CUPS WATER 

COMBINE INGREDIENTS, ALLOW IT TO BOIL. REDUCE TO A SYRUP AND COOL.]

COMBINE ALL INGREDIENTS INTO A TIN SHAKER. ADD ICE, SHAKE VIGOROUSLY AND STRAIN INTO A ROCK GLASS. ADD FRESH ICE AND GARNISH WITH DARK CHOCOLATE BARKS, CINNAMON AND CUMIN POWDER
